1. Half tuber of medium-sized yam
2. 2 large Eggs
3. 3 Tablespoons of all-purpose flour
4. 3 Tablespoons of sugar
5. Vegetable oil for deep frying
6. Salt to taste
HOW TO PREPARE:
In a clean cooking pot, add some water and add your sugar. Now, add some salt to the water. Now, cover the pot and bring it to a light boil. While it’s boiling, get started on your ingredients, starting with the yam. Peel and slice your yam into long slices. Depending on what size you prefer, go on with it. While cutting the yams, try as much as possible to maintain the same shape and size so that the yam can cook evenly.
When that is done, gently transfer all the yams into the pot of boiling water. Boil till it’s almost done, about 80 -90% done. Cover the pot and allow it to cook. Once the yam is almost ready, take it out of the water and onto a tray. Allow it to cool off for a bit, enough for you to be able to handle it with your hands.
While the yams are cooling off, let’s get the eggs and flour ready. In a clean bowl, add your flour and in another small bowl, crack your eggs into it. Now, season with sugar and salt. Add some sugar into the flour and some sugar into the eggs as well. Sprinkle some salt into the flour and eggs as well. Give the flour a good stir to combine. You can add some spice to the flour if you want. Also, whisk the eggs too.
Place your vegetable oil for frying on the heater and let’s kickstart the dip and fry process. Take out a slice of yam, dip it in flour and make sure it is well coated, then set it aside. Do this for the rest of the yam slices. Check if the oil is hot enough to fry before you start frying because once the yam goes into the egg mixture, it’s going straight into the oil.
Now, take a slice of yam and immerse it into the egg mixture, then dip it into the frying pan to fry. Repeat the process until all the yams are fried. You can fry for about 2 to 3 minutes or until golden brown. You can serve it with pepper sauce, ketchup, tomato stew, etc.
