How To Make Grilled Chicken & Vegetable Salad

Ingredients
  

For the Chicken:

  • 2 chicken breast
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon minced fresh pepper
  • 1/2 teaspoon paprika powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ginger powder
  • 1/2 teaspoon ground chili powder
  • 1 seasoning cube
  • Salt to taste
  • Drizzle of oil

For the Vegetables-

  • 1 red bell
  • 1 green bell
  • 1 yellow bell
  • 1 onion bulb
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon minced fresh pepper
  • 1/2 teaspoon paprika powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ginger powder
  • 1/2 teaspoon ground chili powder
  • 1 seasoning cube
  • Salt to taste
  • Drizzle of oil

To assemble the salad-

  • Sweet Corn
  • Lettuce
  • Hard-boiled eggs
  • Cooked Chicken
  • Cooked veggies
  • Cucumber

Instructions
 

  • Start by cutting your already washed bell peppers into bits. Also cut up your onions into bits and mince up your garlic as well. Now, slice your carrots too. Now, add your vegetables into a mixing bowl and place your chicken breasts into the second mixing bowl.
  • Add some minced garlic into both bowls. Also add paprika powder, ginger powder, curry powder, ground cumin, chili powder, seasoning cubes, and salt.Basically, whatever you season the chicken with, also use them to season the veggies as well. Also, add a drizzle of oil and a tablespoon of water on top of each.
  • Now, mix everything to combine. Ensure that the chicken pieces are thoroughly coated with the marinade. Also, mix the vegetable strips as well. Now, drizzle some oil in a pan, allow to heat up, then place some of your chicken on one side of the pan, and place the vegetables on the other side of the pan. Leave the chicken to fry until it's perfectly brown and then flip to the other side of it to also fry evenly.
  • Cover the pan and leave to cook for another 4 minutes to allow the veggies to soften up. Take the veggies out and set them aside. If the chicken isn't fully cooked, cover the pan and allow it to cook. Once it's ready, take it out of the pan and allow it to cook down completely. Now, you can cut the chicken into tiny slices.
  • To Assemble, place the chicken breasts in salad bowls. In the other compartment, add your lettuce, sweet corn, boiled eggs, cucumber slices, and your vegetables. That's it. Your protein-packed meal is ready.
