Vegetable Sauce Recipe
Ingredients
- Vegetables
- Yam
- Plantain
- Salt
- Fish
- Shrimps (optional)
- Seasoning cubes
- Onions
- Tomatoes
- Fresh pepper.
Instructions
- Start by peeling and cutting up your yam and plantains – but if you feel like you'd rather have them not peeled, you should properly wash them through and through. Get a clean pot, add some water, then add your salt. Put the yam and plantain into the water and cover the pot to boil.
- While the yam and plantains are boiling, start spicing up your fish. Use seasoning cubes. Feel free to use fish or meat or whatever you prefer.
- Next, in a clean cooking pan, add some oil and start frying your fish or shrimp. Gently turn them to the other side for equal and even frying. Once that is done, add more oil to the pan and then add your already sliced onions.
- Add your curry powder, seasoning cubes, salt, carrots, and any other spice of your choice. Stir and fry for about two minutes. Now, add your blended tomatoes and pepper into the mix and stir again.
- While the tomato mixture is cooking, start cutting your vegetables if you haven't done so before. Don't forget to wash them thoroughly before cutting. You can use any vegetable of your choice, pumpkin leaves, or anyone.
- Check on your stew and give it another quick stir. Have a taste and adjust the seasoning if there is a need to do that. Now, add the fish and the shrimp, stir, and add your already-cut vegetables. Cover the pot and let it simmer for about a minute, then stir gently before taking it off the heat.
- Check on your yam and plantains to make sure that they are soft enough for eating. You can poke a fork through the yam to check if it is soft. Once that is done, sieve the water out of the yam and plantain, peel off the skin and your food is ready to be served and eaten!
PRO TIP:
Always wash the yam and plantain thoroughly if that is your choice of preparation. That is, if you choose not to peel the skin before cooking. Don’t forget to always taste your food to check for any missing seasoning and add accordingly. Taste differs and if you feel like you should get a second opinion on how the food tastes, either because your taste buds seem different or you are ill, please do.
