Ingredients
  

  • 4 large eggs
  • 2 Tablespoons of sugar
  • 1 Cup and 1 tablespoon of whole milk
  • 1/4 tablespoon of salt
  • 1 Tablespoon of vanilla extract
  • 120g (1 Cup and 1 tablespoon of cake flour)
  • 1 tablespoon of baking powder
  • 1/2 Tablespoon of cream of tartar
  • 50g of fine sugar
  • Whipping cream

Instructions
 

  • In a clean bowl, add your eggs – separated. Then add 2 tablespoons of sugar to it. Whisk until creamy and pale. You can use a hand mixer or a whisk. Whichever one you have available.
  • After that is done, add 1 cup and 1 tablespoon of whole milk into the mix. Whisk one more time to even. Next, add 1/4 tablespoon of salt. Now, add 1 tablespoon of vanilla extract to the mix and whisk again.
  • It's time to sieve your flour. Place a sieve over the bowl and sift 120g (1 Cup and 1 tablespoon of cake flour) into the egg mix. Also add 1 tablespoon of baking powder. Mix until the flour disappears. Do not over mix, or it could have an adverse effect on your cake. When you're sure it's all mixed up, set aside.
  • Next up, add 1/2 tablespoon of cream of tartar to some egg white in a clean bowl and mix until bubbly. Add 50g of fine sugar. Add the sugar in little by little as you whisk on. Continue mixing until stiff peaks and turns white. Add the egg white mixture into the batter in a few batches. Mix evenly and add the next batch. Mix until the white disappears. Do not over mix. Pour into a prepared 7x7 inch pan which has been greased and lined with parchment paper.
  • Use a skewer to do as shown in the video to release the bubbles. Tap the pan a few times to further release air bubbles. Bake in preheated oven at 160 degrees centigrade for about 20-25 minutes. Now, after the cake has been baked, take it out and place it (still with the parchment paper) into a clean container. Now, add 1/3 cup of evaporated milk to a measuring jar.
  • Add 1/3 cup of whole milk to it. Add 1/4 cup of condensed milk too. Whisk gently together. Now, use a fork to poke many holes on the surface of the cake. Next, pour the milk all over the cake. It will be absorbed into the cake. Let it rest for 30 minutes to 1 hour.
  • In a clean mixing bowl, add 1 cup of whipping cream and whisk until stiff peaks, until it's thick and white. Add your whipping cream on top of the cake and flatten it out evenly.
  • Smoothen it and refrigerate for 1 hour before cutting. Trimming the side of the cake after is optional. You can serve directly from the tray. You can now design your cake and add whatever you wish to before serving.
