Ingredients
  

  • Flour (2 cups/ 250g)
  • Half teaspoon of salt
  • 1/4 cup (60ml) of oil or melted ghee
  • 3 Potatoes
  • 1 Teaspoon of Cumin seeds
  • 1 Teaspoon of Coriander seeds (crushed)
  • 1/2 Teaspoon of Garam Masala
  • 1 Teaspoon of Chili Powder
  • 1 Teaspoon of turmeric
  • 1 Green chili
  • 2-3 Cloves of garlic
  • 1 Tablespoon of Ginger Paste
  • Onion
  • 1 Cup of Green peas (150g)
  • 1 tablespoon of lemon juice
  • 1/4 cup of Crushed cashews
  • 2 Tablespoons of Coriander leaves (Chopped)

Instructions
 

  • Pour your 250g of flour into a clean bowl. Now, add half teaspoon of salt and mix gently. Now, add your 60ml of oil to the flour and stir gently. Mix until it's evenly incorporated. Rub the flour with the oil until the mixture resembles crumbs. Now, add your water. Add gradually.
  • Mix again. Add some water and knead into a firm dough. Keep kneading till it's smooth and firm. Now, cover and let it rest for 30 minutes.
  • Next, peel your potatoes and boil them. After that, roughly chop or mash them into bits. In a clean cooking pan, add 2 tablespoons of oil. Add your cumin seeds, coriander seeds. Then, add your Garam Masala. Next, add your chili powder. Cook for 30-60 seconds.
  • Now, finely chop your green chili, chop your garlic and add it to the mix. Also add your tablespoon of Ginger paste. Now, cook for 1 minute. Add your chopped onions to the mix and fry for 3 to 4 minutes. Now is the time to add your chopped boiled potatoes to the mix.
  • Also, add your green peas and stir gently. Add your lemon juice. Also, add water to the mix. Next, add some salt. Cook for 4-5 minutes, stirring frequently.
  • Next, add your crushed cashews to the mix. Pour your Coriander leaves to the mix too. Make sure that they're chopped. Stir gently. Remove from heat and allow it to cool. Now, take out the dough and divide into 6-7 equal parts. Shape them into balls.
  • While working on one ball, keep the remaining dough balls covered. Now, roll out each ball into an oval about 6 inches (15 cm) and 4 inches (10 cm) wide. Now, cut the rolled out dough into half and brush with water.
    Next, form a cone with each half (watch the exact description in the video). Fill the samosa with the potato filling. Now, brush the edges with water, then pinch the edges and seal the samosa. Repeat the same process with all the dough till you get quite a good number of samosas.
  • Place a pot of hot oil on the heat and drop the samosas into the hot oil 4-5 pieces at a time. Fry for 4-5 minutes until it turns golden brown. Sieve the samosas out once it's ready. Drain it on paper towels. Your Samosa is ready to be served and eaten.
