Quick & Easy Mango Dessert: Hi there foodies, welcome to another tutorial that would blow your mind. Have you tried mango dessert/mango pudding?

A Mango is an incredible fruit all by itself, no doubt, but it can also do so much more when paired with other ingredients.

Here’s an easy Mango Pudding recipe, made in a similar fashion as my coconut pudding, but with some changes. It’s similar because of the use of corn flour, and different because of the fruit and milk used.

Ingredients
  

  • Pulp of 2 Ripe Mangoes
  • 1 & 1/4 Cups Milk + 1/4 Cup Milk (you may use non-dairy milks)
  • 1/2 Cup Sugar (adjust as per sweetness of the Mango)
  • 2 Pinches of Salt
  • 1/4 Cup Corn flour
  • Juice of Half a Lime*[1 cup=240 ml]* Lime juice provides an acidity that balances the sweetness and enriches the flavor of the Mangoes. IT IS TO BE ADDED AT THE VERY END, or else the milk will curdle.

Instructions
 

  • Wash your mangoes properly before using them. Dice them and take away the mango seed. Now, tale out the pulp and scoop them in a blender jar.
  • Don't forget to remove the Mango skin. To the collected pulp, add 1/2 cup of sugar. Add 2 pinches of salt. Grind to form a puree.
  • Now, pour in 1 and 1/4 cups of milk. Now, blend everything all up till its homogeneous. Now transfer this mixture into a cooking pan.
  • Let's create a slurry:
    Add 1/4 of corn flour and 1/4 cup of milk. Stir well to mix up and set aside. Set the heat to medium and place the mango like liquid on top of it.
  • Once it begins to boil, reduce the heat to low. Stir the slurry before pouring. Keep stirring the mixture to prevent lumps.
  • Stir vigorously to ensure a smooth mixture. Continue stirring on low flame for 4-5 minutes. It will thicken and start to bubble.
  • Now, turn off the heat. Now, squeeze in the juice of half a lime. Stir it in. The juice must be added at the very end. Pour it into greased mold.
  • Cool to room temperature and refrigerate for 2 hours. Un-mold carefully. It tastes best chilled. Garnish with fresh mango and mint.
