Nigerian Coconut Rice Recipe
Today, we will be showing you a step-by-step method to making your own special homemade delicious coconut rice.
Ingredients
- Cayenne pepper
- Onion Powder
- Yellow pepper powder
- Dried thyme
- Paprika
- Garlic Powder
- Ground black pepper
- 3 Fresh Coconuts
- Coconut milk
- Green Bell peppers
- All-purpose seasoning
- Ginger
- Fresh pepper
- Green chili
- Ground Crayfish
- Seasoning cubes
- Salt to taste
- Coconut oil
- Onion
Instructions
- The first thing to start with would be to parboil the rice. After boiling the rice, drain the water and wash it about two to three times to be rid of any dirt. Then, put it in a clean sieve and place in a clean place till you're ready to use it. Now, let's get started on the coconut.
- Break the coconuts into pieces. You can use a pestle to do this, and make sure that you place the coconut pieces into a clean bowl. Now, peel away the hard shelf of the coconut and cut the coconut itself into tiny bits. The coconuts should be chopped into bits so that you can easily blend it.
- Now, add the coconuts into the blender and add enough water and blend away. Blend till you get all the juices out. Now that you have blended it properly, drain it in a sieve. This will filter the milk and leave the coconut chaff. Run a little water through it about once or twice and transfer into a clean jug.Now, in a clean pot, add some coconut oil and your chopped onions. Add your chopped or grated ginger and chopped red pepper. Then add your chopped green chili. Give it a good stir.
- Next, add your green bell pepper and stir. Then, add your paprika, garlic powder, cayenne pepper, black pepper and onion powder. Now, add your thyme and seasoning cubes. Add some salt and finally the coconut milk.Now, you can add your parboiled rice to the mix. Make sure that the coconut milk covers the rice. Then cover and leave to cook for some time. Add crayfish when you see that the rice is almost cooked.
- Add enough crayfish, but not too much. Also, you can add your shredded coconuts on top of the rice. This would mean that you would place some coconut aside to be shredded before you blend the rest.
- Stir gently and leave to get done. Your coconut meal is ready!
