For the Igbo people of Nigeria, Ugba is not only a native meal, it is a special meal, one that is either specifically asked for or prepared for a celebration, meeting, or something important.
Ingredients
- Ugba
- Kpomo
- Red oil
- Crayfish
- Pepper
- Seasoning cube
- Potash
- Onion
Instructions
- Start out by washing and cutting your Kpomo (cow skin) into small bits. After that, put them into a clean pot and add seasoning and some salt. Add some water.
- Allow to cook for some time. While that is cooking, add some palm oil into a pan. Melt your potash and add the liquid into the red oil. Stir as you do so.
- Blend your fresh pepper and add it to the oil. Next, add your crayfish and stir. Now, add some seasoning cube and salt. Stir gently once more. Next, add your Ugba to the oil mix.
- Add some chopped onions and stir to combine. Next, add your cooked Kpomo (cow skin) and stir once more to evenly combine. Your Ugba is ready to be served.
