Buttermilk is an amazing ingredient for pancakes, cakes, and even fried chicken. It should be made from cream but isn't.
Ingredients
- One tablespoon of lemon juice
- A cup of whole milk.
Instructions
- Let's get started by adding a cup of whole milk to a measuring bowl. Note that buttermilk has a PH closer to 4. Milk is around six, so it's more acidic. The acid will react with leavening agents when you bake, that's why it makes those fluffy pancakes that you love so much. That's why it is used in a lot of cake recipes, including red velvet.
- Now, to the whole milk, add a tablespoon of lemon juice. Now mix gently. Next, you can either set it aside or microwave it for about 30 -45 seconds just to warm it up and then leave it for about like 10 minutes. Once that is done, set it aside.
- If you don't have fresh lemon juice, vinegar works just fine. Vinegar is actually the go-to for most people. You can use any vinegar that isn't too much or too crazy. It could be white vinegar or rice vinegar.
- In a clean coverable cup, pour out the mixed milk juice and shake it together. Set it aside. You can taste it to be sure of the consistency.
