Ingredients
  

FOR THE CHICKEN

  • 300g Boneless Chicken
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 2 tsp Black Pepper
  • 1 tsp Chicken seasoning or 1 Bouillon
  • 1/2 tsp Salt
  • 1 tsp Smoked Paprika
  • 2 tbsp Cornflour

FOR THE STIR FRY

  • 3 Bell Peppers
  • Spring Onions
  • 1/2 Small Onion
  • 2 Chili Peppers
  • 1 tbsp Minced Garlic
  • 1 tbsp Minced Ginger

FOR THE SLURRY

  • 4 tbsp Dark Soy Sauce
  • 4 tbsp Light Soy Sauce
  • 2 tbsp Oyster Sauce
  • 2 tbsp Cooking Wine
  • 1 tsp Sesame Oil
  • 1/3 Cup Ketchup
  • 1/3 Cup Sweet Chili Sauce
  • 2 tbsp Cornflour
  • 2 tsp Chicken Seasoning.

FOR THE SLURRY SAUCE

  • Dark soy sauce
  • Light soy sauce
  • Oyster sauce
  • Cooking wine
  • Tomato ketchup (you can use tomato paste if you don't like ketchup)
  • Sweet chili sauce
  • Chicken bouillon cubes
  • Cornflour
  • Sesame oil.

Instructions
 

  • Wash and place your boneless chicken into a clean bowl and then, add your garlic powder to season it up. Also add your black pepper and your smoked paprika.
  • Next, add your onion powder and chicken bouillon cubes. Now, add your salt and some cornflour to the chicken. At this time, just mix them all up to allow the ingredients to circulate.
  • After mixing them up thoroughly, cover it up with some cling film and allow it to marinate for a while, say about 30 minutes.
  • In a clean bowl, add your ingredients together to form a mix. You don't have to use everything that has been listed in this recipe for the slurry. You can add to your taste. You don't have to use the dark and light soy sauce, you can pick one. You can also skip the cooking wine if you don't have it.
  • Now, mix up all the ingredients that you have added into the bowl. Whisk them gently.
  • Now, let's get started on the other ingredients…We have the chopped sweet bell peppers – yellow and red. You can also use green peppers if you wish to add them.
  • We've got some red chili, minced garlic and minced ginger, diced spring onions and some chopped onions.
  • Set a pan on medium heat and sprinkle some vegetable oil onto it. Now, start adding your marinated chicken. Fry the chicken until it's fully cooked. As long as your pan is a non-stick pan, you should be okay with that little oil. Don't add too much of it.
  • Allow the chicken to fry on one side before flipping to the next. After about 6 or 7 minutes of frying, it should be looking brown. Take them out and transfer them to a bowl.
  • Add your minced ginger and garlic to the pan, which should have some oil residue. Fry for about 2 minutes. Please keep an eye on it, so that you don't end up burning the garlic. Now, add some chopped onions and fry for another 2 minutes.
  • Next, add your chili and your chopped bell peppers. At this time, you can turn up the heat to high. Fry your vegetables for about 2-3 minutes. Please do keep an eye on it, otherwise, it's going to burn. Now, add your slurry sauce and leave to cook for about 3 minutes.
  • Next to come in would be your chicken. Now, add your spring onions. Combine thoroughly and leave to simmer on low heat for a minute. You can serve with white rice or yam.
