Instructions
- For the best results, you want the meat to be really thin. So, get a rolling pin, flatten your beef out on a clean chopping board and place a cling film over the beef. Now, hit the beef gently to flatten it out even more.
- Once that is done, cut them into strips, just like suya sizes. When you're done cutting and slicing the beef, place them in a clean bowl. Set it aside.
- To make the marinade for the beef, in a bowl, add some corn oil. Add some seasoning cube, garlic powder, ginger powder and some salt. You can skip the salt and add more seasoning if you want.
- Mix the marinade well, pour it all over the beef, mix them all up and cover the bowl with a cling film and let it marinate for about 2 to 4 hours. Preferably overnight.
- Let's make the suya spice. We will be using ground ginger, garlic, seasoning cubes, Cameroon pepper or cayenne pepper, salt, calabash nutmeg, onion powder, black pepper, kuli kuli.
- Start by roasting the ehu seeds, also known as the calabash nutmeg and the black pepper. Roast for 2 minutes on medium heat. Don't let them burn. Once they start turning brown, take them off the heat.
- Once that is cooling off, go ahead and smash the kuli kuli. This is one of the most important ingredients for this suya recipe.
- Put your kuli kuli into a zip lock bag and start breaking them into smaller pieces. If you don't have a ziplock bag, you can use a mortar and pestle. This is to make blending it a lot easier.
- Once that is done, transfer into a bowl and add all of the spices listed earlier. Also add your ehu seeds and your black pepper.
- Start blending your mixture. Take as much as the blender can contain and blend smoothly. Pour it out into a bowl and continue blending till everything is done. We just made our suya spice.
- Sieve out the suya spice and set aside. Take out your skewers and soak them in water. Get your beef out and start adding them to the skewers nicely.
- As you complete each skewer, place it on a clean plate. Stack them all up till everything is complete and set. Once everything is assembled, it's time to start adding the suya spice.
- For those who want a lot of suya spice on their beef, you can soak the beef into the suya spice to fully coat it. Then, you can move straight to the open flame or your oven.
- Set your oven to 350 degrees Fahrenheit and let it work its magic for 15 minutes. After that, flip it over the other side, dab some oil and roast as well.
- For the other method, simply add your beef to your spice and mix them all up, no skewers this time. Get a foil and spread the suya all over the foil. Place them in the oven too and after 15 minutes, take them out and dab some oil on them as well and place them back in.
- After 30 minutes, your suya is ready. You can garnish with some chopped cabbage and onions if you like. You can even add tomatoes. Enjoy.
